And switching gears, when was the last time you visited Jamaica or Trinidad? If you've never been to the other Caribbean countries, well, you can still get a little taste of them right here in Belize. Kevin's Caribbean Kitchen boasts a wide variety of menu items from across the region, including jerk and curry meat options. The head chef, Kevin Dawson, said that he's always known he would eventually own his own restaurant, because while he was never "book smart" he loved creating art in the form of food. And earlier this week, his dream was finally realized. Courtney Menzies stopped by his restaurant in Ladyville and has this story.
The restaurant runs parallel to Dawson's charity foundation and currently, they are raising funds to host a Sports Day on Easter Monday for 100 needy kids in the area.
Gateway Graduation
And in yet another graduation today, Dr Carol Babb, Peacework Belize, and the Embassy of Taiwan celebrated the closing ceremony of their Empowered & Resilient Women Program.
It saw 45 participants take on or update their skills at cake making, mani-pedis, and even budgeting for success, all in an effort to send them into the world as independent entrepreneurs.
7News was at the ceremony this morning to witness the proud and self-actualized women collect their certificates and even some special mentions. Here's more:

Well I am here to tell you that sometimes opportunity doesn't knock, you may have to build the doors that opportunity knocks on your door."
