And keeping it in the water, the past Weekend was reserved for Lobster Fest in San Pedro, Caye Caulker and Placencia.

Call us biased, but we're partial to the original, the real deal hosted in Caye Caulker.

Sun, sand, sea, and lobster on the grill made Lobster Fest 2023 was a festival of food and fun:

Hi guys we are at Caye Caulker LobsterFest 2023 and it's the best."

And while the fest is tailor-made for the young, thrill - seeking beach goers, it's really all about the food. And between Saturday and Sunday, we talked to some expert lobster grillers to get a sense of what business was like at the very start of the season.

Vendor

"We buy from a lady, she goes and gets it fresh from the sea and then she brings it to us freshly, like you can. See they are still moving. It's getting there, it's still early, we got until four in the morning to go."

"Lobster fest has been so wonderful and great thank you Jesus."

And the stalls were no less lively on Sunday when we found the chefs in high spirits making the lobsters dance and prepping that buttery glaze that is the perfect accent for the prized crustacean.

Cherisse Halsall:
"Talk to us about the lobster sales?"

Vendor

"Uh huh, what kind of tail, which one of the lobster tails them, no, no sales..."

Cherisse Halsall:
"How are the sales going?"

Vendor
"Oh Good babes, the lobster sales are going good and I can't complain, If I complain it's because something Wong."

And when we stopped by the famous Chef Kareem's stall, he told us that a two hundred pounds of whole lobster had gone like water and this point he was just pushing the smaller lobster tails.

Chef Kareem
"We are doing this thing like 20 years you know."

"I am just watching all the youngsters coming around now and it's just the same thing and I'm just doing my thing."

Cherisse Halsall:
"But did people buy a lot of Lobster this year?"

Chef Kareem
"Yes, man."

"We can't do enough lobster, I made three trips home yesterday and I'm talking about another three trips today."

And though lobster was scarce on Sunday, that didn't stop us from finding our very own Sunday plate and this was the guy with the juiciest, fluffiest servings.

Mr. Garcia, Expert Lobster Griller

"I will be honest with you mammy, lobster fest it's been alright, I won't say it's been that good but it was alright because a lot of. People were around and people are spending but everybody wants a little discount and you know the lobster they don't come discounted, the people, the fishermen they want their thing fully loaded, you know, so I want a little extra for myself too but I reason with my people them there, you know."

"I am not a fisherman, I am a land fisherman but I have my people who go. And do the fishing, you know, so they bring my lobster to time so I never run out of lobster here, so it's easy apart from that everything curry, everything curry."

More buttery than curry but certainly delicious.
