
If you're from the Majestic Alley area, you probably have tried the conch fritters from "Flitters Man" aka Joshua Gillett. Gillett discovered his love of cooking from the age of ten and he later went on to cook at Tipsy Tuna in Placencia. He now operates his food business out of his home in Majestic Alley, and says that his fritters sell faster than he can make them. He is now using his success to try to encourage other youths in the area to put down the gun and pick up a spatula.

"I just want to tell the ghetto youths if you want to learn something more positive in cooking and if you have something what you want to uplift for dreams and do something positive just for me coming out of the ghetto in Majestic Alley and mostly people see me like they thought I wanted to be like maybe a gunman - no, its just keeping your mind to doing something positive and something constructive. You can do a lot in cooking. I do fritters, I do rice and beans, I do different type of food. To show my talent I come from the ghetto, so positive stuff is always on my mind. I also have an organization "positive youths" what I am trying to register right now at this moment."
Gillett makes his famous fritters on Fridays and Saturdays and can be seen walking around with an icebox. He is asking for support from the public in the form of a bicycle cart to continue his business.
